für Liiso


LEITE-CREME

Ingredients_
1L milk
lemon rind
350g sugar
1stick of cinnamon
16egg yolks
30g maizena

Procedure_
1st_When the cream-milk is started to being prepared, should not have big stops, so you should have have everything by the hand
2nd_Boil the milk with the stick of cinnamon and the lemon rind
3rd_Mix in a bowl the egg yolks with the sugar using a mixer of poles or a wood spoon; then you mix also the maizena until getting a silky mixture, but without making foam
4th_Lie down a few hot milk with the mixture moving always, in order that the heating is gradual, as well that it doesn't have portions of the egg that reach temperatures that take it to cook; Moving, the heat if distributes equally for all the mixture of the sugar with egg yolks
5th_Continue...monving...bery slowly
6th_Lead to the low fire to thicken; never stop moving; don't let it boiled, for security don't let the temperature of the chemical preparation exceed the 80ºC

The cream is already prepared...

Now the "magic touch"...

7th_Just when is prepared to be served, to eat, burn a bit of sugar on the superficie

Now "EAT AN ENJOY"!
